Which do you value more, the experience and interaction with who ever is running the coffee shop, or the quality of the product you receive from the coffee shop?
I agree with some of the pros and cons as mentioned already... comes down to two things from a business stand point --1-Do you have the "culture of excellence" in your customer base already? or are you wanting to do this to try and create it? and ...
I found this article and did a search for it in the forums and I was glad to see discussion started about it.

William, I can identify with your desire to improve your skills and take things to the next level. You mentioned attending an event in Minneapolis. I just read an article about a new shop opening up there. Sounds like these people have the mindset...
