Just want to say GOOD LUCK to group member James with his new london based cafe "Dose". I have forwarded his cafe details to my Kiwi and (dare I say it) Aussie friends over there. Its great to see Kiwis flying in Cafe circles all over the globe.

Hey James! I do hope you're roasting your own beans? My daughters and sons in law will LOVE it if you are! (They're in Fulham and I send them a kg of my best every now and then by airmail!). If not, seek out some of the local roasters on alt.coffee. GO FOR IT!

Good point Eddie...James if you are not roasting you have to! The one area that the UK lags behind in even more than a good shot, is a well roasted bean! I hear "Square Mile" has made a killoing as well as a granite solid reputation by roasting quality. I reckon there is a second niche there for you if you are not already doing it. If you need a hand Eddie and I are available ;p

Absolutely!! I learned everything I know from the alties and experience! I also know of a man who could build you a NZ-designed, cost-effective, gas-fired fluid bed roaster for a LOT less than you'll get a commercial one for. Maybe I could come over there with one and set it up for you? :-) Meanwhile, download their coffee FAQ and study it, try out the HGDB method, and get into it. Call us if you'd like to discuss it sometime.

I leave the roasting to the experts dude- Square Mile Roasters in Bethnal Green, amazing coffee, fresh and alive and they fit right in with my ethical standards. They do a coffee club type thing- first of the month you get a fresh bag of something interesting sent out- your daughters might appreciate that.

Roasting was at one point going to be part of the business plan but my current premises won't allow for it. I'll definitely revive the idea for my next place though.

Hey Eddie. I'm in NYC and trying to teach myself how to roast and brew. I'm getting some pretty good results so far and loving learning the craft. I've moved from a modified popcorn machine to a hottop and am considering my next move upward. Did you teach yourself? I'm confident I can with the right resources with the hope of one day in the hopefully not so distant future starting something up here in NYC. That's the dream.....can you tell me more about this NZ designed fluid bed roaster and where I can learn more about it.

lemme throw you a couple observations from my first month of being open: 1) i bought a 3 group LM GB/5 used, cause it was a good deal and in good condition. my initial plan was to buy a new 2-group linea and PID mod it, but the used GB/5 was cheape…

Brady, thank you for the response. You made a great point about the opening week needing the higher capacity. I would imagine the opening week, as a first impression, would be critical in putting a shop's best step (and product) forward to encourag…

I believe your conclusion is correct. If your growth and profitability curves match most cases that I'm aware of, you'll be less able to afford equipment after 1 year than you are before you open. Buy good quality equipment at the start that will me…

Agreed, it is best as a subtle hint to complement another flavor. I like pairing it with a nut flavor, caramel, or vanilla... but only in levels that do not totally overwhelm the coffee. If you have a softer apple flavor available, it is a nice comp…

I understand the philosophy, and know that some shops do this, but this doesn't seem to me to be an appropriate use of the sanitizer. Remember that Quats is a sanitizer, not a cleaner. Sanitizer is meant to sanitize solid surfaces that are already…

Is there some consensus on a preferred method for cold tea prep? I would imagine the product is different with each method, but is there a majority and minority camp? Just curious.
