Emeril's Cooking with Coffee Episode

The Duck recipe looks promising, though we can wish for more specificity of coffee. Strong brewed is hardly sufficient.

We recently hosted a cupping with three R Miguel coffees at our cafe. I have limited experience with high cuisine, but we tried to pair/accentuate/contrast three desserts with these three coffees:

Pulped Natural Hawaii
Paired with Espresso Vodka Granita.
simple, a little orange zest, very effective.

Monkey Parchment: Wild, smooth, Indian.
Paired with: Green Cardamom and Black Pepper Ice Cream. Philadelphia style.

Natural Process Hawaii Ka'u an amazing coffee- like brandy and orchids.
Paired with Rose Panna Cotta- modified recipe.

The event was minimally attended- but we continue to try to build support in our community for coffee/culinary interplay.

How do? Since we are talking about culinary side of the industry as far as drink development then I feel this could catch on quickly. I have 15yrs. as a chef. Hard knocks way up. Heavy on Thai, Japanese. Also keep a eye on what is current in the scene, so the approach of most recipes comes from different aspects of my training. That is all I have to say about that.

hold onto your secret recipes for now - though I would be interested to learn more about them off the public forum. I add coffee to my chile con carne for a nice rounded flavor - but haven't put much thought into how a specialty coffee might enhance in different ways. Questions like this are why I started the group. But please - do tell more about your hot chilli with coffee.

I am not sure whether to share the delights/secrets of my infamous coffeeish desserts. I do have a bizarre recipe for a hot chilli with coffee in it. Am not sure what I make of it yet.
Photos are few and far between.
