Pairing coffee with food is good practice for the palate. Some coffee pals and I are pairing coffee and fine cheeses. We've made notes and want to come up with a format for future pairing evaluation. We may not go as far as scoring, but it is not out of the question. So far we've made successful pairings with five Dutch cheeses. The goudas felt like a good place to start and proved us right. We'll see how other cheeses play out. Anyone interested in our endeavor should post here or direct message me.

We haven't paired Gjost. Maybe we'll approach Swiss cheeses next and can inlude Gjost. Suggestions and input are welcome. Has anyone on BX found a good pairing they would care to share? We'll go by nationality then types of cheeses (soft ripened, washed rind, etc.) I've read about a coffee washed cheese, but haven't found it. We have a great local cheesemaker - so maybe . . .

yummm treva, I love this. Keep me in the loop. Sharp cheddars and "bitey" cheese are fun with espresso. got to go appointments here.

Hi Treva, Italian cheeses such as Parmesan (Grana Padano) and Provolone make grat pairing. And have you got any Brazilian Deli near by? We have some interesting cheese here to pair with coffee.

Hi Flavia, We've had success with hard and semi-hard cow's milk cheeses such as Grana Padano, Goudas and Piave Stravecchio. We recently paired a creamy chevre with an iced Kenyan. Tang with tang. There is a Brazilian Grocery not far from here in Silver Spring, Maryland. Thanks for the tips. I'm very interested to know about other pairings that you discover.

I've just entered this coffee recipes contest (sweet, savoury and drink) here in Brazil and I'm coming up with some ideas. As soon as I test them I'll let you know!

I'm not sure if you're looking for different importers/ roasters, but I know that Cafe Imports has a great deal of information on most all coffee they carry. I'm not sure if they offer there coffee roasted already or if its all green.
